one week, Joseph, and a recipe


My head is definitely spinning. Welcome to the 1 week anniversary of my blog creation. If you have been visiting, you've noticed that I've re-designed my blog 3 times now. It has become kind of an addiction. However, now that I've found http://www.shabbyblogs.com/ ,I don't think I will be changing it anytime soon.

We had a busy weekend, as you can see on my "picture of the day", my daughter, Katie, was in Joseph and the Amazing Technicolor Dreamcoat (9 performances~whew!). And now, the track season starts tomorrow...no rest for the weary. It was also Pinewood Derby (a picture of Luke and his car will be on the site later this week).

I'm getting ready for my sister in-law's baby shower and will have lots of new crafty projects to show you as that draws closer.

Now for the recipe...I used to work with a great gal, Janine, that gave me this recipe eons ago. I haven't made if for awhile, and the broccoli was calling my name in the grocery store this week. Enjoy!

Mostaciolli Broccoli Bake
1# box of mostaciolli, cooked
1/4 c margarine
1/4 C salt
2 C milk
1/2 C Parmesan cheese
1/2 tsp salt
1 clove garlic, minced
1/8 tsp nutmeg
2 C broccoli, cooked
1/2 to 1 C Swiss cheese, diced
*Optional~sometimes, I like to throw in some grilled chicken pieces (about 2 breasts worth)

Melt margarine. Stir in flour until blended. Add milk. Cook on medium until thick, stirring constantly. Stir in Parmesan and spices. Remove from heat. In large bowl, combine pasta, sauce, and broccoli. Place in a 9x13 dish. Sprinkle cheese on top. Bake at 350 degrees for 10-15 minutes.

Ok, I know it is spring, but I am still working on photos from 2008. Halloween is where I am, so Halloween is what you get to look at. However, it does have butterflies, so it is easily adaptable for spring time.

Mondays, recipes, and Ole!

So, the truth is that I have been slacking on my organized method of menu planning. However, I have decided that every Monday I will post a new recipe. Every Monday...just like Mickey Mouse Club (except they didn't have "What's cooking" Day). So, recipe #1. This is what's cooking at our house today. It will also be page 1 of my scrappy cookbook (that I haven't started yet, but maybe I will get to that today).



Chicken Enchiladas-Ole!
3-4 boneless chicken breasts, cooked or grilled and cut into small pieces
1 large onion, chopped
¼ C butter
3 C hot water
¼ C flour
8 oz sour cream
3 small chicken bouillon cubes
4 oz chopped green chilies
1 package dry taco seasoning
2 C shredded cheddar (or taco) cheese
20 small (or 10 large flour tortillas)

Preheat oven to 350 degrees.
In a sauce pan, melt butter. Add onion, cook until tender. Stir in flour, hot water, and bouillon (I like to use a whisk to get rid of flour lumps). Cook until it boils, stirring often. Let boil one minute. Remove from heat and stir in sour cream. Set aside.

In a large bowl, mix cooked chicken, 1 C cheese, chilies, 2 C of prepared sauce, and taco mix.

Put a scoop of this mixture in each tortilla, roll, and place in a greased 9x13 pan. Place the tortillas close together so they don’t unroll. Top with remaining sauce, then cheese. Bake uncovered for 25 minutes.

GRAND OPENING, blogging, and patience

This is my first posting as a blogger. I have joined the blogging world. Thanks for peeking into my random thoughts and creations. It may take me awhile to figure out all of this posting, and customizing, and linking, and adding photos, so be patient. I promise it will be worth it.
